Risotto

An Italian rice dish renowned for its creamy texture and moist consistency, risotto is founded on a starchy rice that comes from the town of Arborio in Northern Italy. The rice is gently sautéed in butter or olive oil with chopped onions as hot stock is stirred into the rice in ½ cup increments allowing the liquid to be absorbed by this medium grain rice. When done to a perfect Al Dente texture, the grains remain firm and separate while at the same time becoming silken and smooth.

Risottos can be flavored with subtle ingredients such as cheese, white wine or Saffron (Milanese) to form the perfect starter, or more substantial ingredients from mushrooms and vegetables to shrimp, lobster and chicken to form a robust main course.
