Homemade Chocolate Marshmallows

It’s snowing here in the east and nothing is better then coming in from the cold and drinking hot chocolate with these homemade marshmallows or cooking them over a roaring fire. But, be careful, once you taste these light, fluffly marshmallows, store bought will not seem the same.

Ready

  • 3 envelopes (3 Tbsp) powdered gelatin
  • ½ cup cold water
  • 2 cup granulated sugar
  • ⅔ cup corn syrup or glucose syrup
  • ¼ cup water
  • ⅓ cup sifted cocoa powder
  • ¼ tsp salt
  • 1 Tbsp vanilla extract
  • Powdered sugar (Confectionary sugar)
  • Vegetable oil

    • Set

  • Electric mixer with whisk
  • Heavy bottom pan
  • Candy thermometer
  • Spatula
  • Plastic wrap
  • 9”x13” glass baking dish
  • Pizza cutter or scissors
  • Medium bowl
  • Airtight container

    • Go!

  • Prepare baking dish by lining with plastic wrap and oil wrap with vegetable oil. Dust with powdered sugar. Set aside.
  • Add ½ cup cold water into mixing bowl of mixer.
  • Sprinkle in gelatin and let soak for 15 minutes.
  • Add granulated sugar, corn syrup, and ¼ cup water to pan.
  • Bring to boil until it reaches 250°F on candy thermometer.
  • Remove from heat.
  • With mixer on medium speed, carefully stream in hot syrup into gelatin.
  • Once all syrup is incorporated into mixer turn mixer to high speed.
  • Mix 8 minutes.
  • Turn mixer to low and add salt and vanilla extract.
  • Now add cocoa powder to mixer and when incorporated, turn mixer back up to high speed and mix for another 3 minutes.
  • Pour into prepared dish and smooth out with spatula.
  • Cover loosely (oiled plastic wrap) and let set at room temperature for 4-5 hours to 24 hours.
  • Turn out onto surface dusted with powdered sugar. Peel off plastic wrap .
  • Place some powdered sugar in medium bowl.
  • Cut into desired size pieces with pizza wheel or scissors (oil with a little vegetable to prevent sticking).
  • Dust pieces in medium bowl with powdered sugar and shake off excess.
  • Place in airtight container.

    • Recommendations

    You can omit cocoa powder if you like the traditional marshmallow. The longer you let these set the easier it is to handle.
