Jewish Apple Cake for Pesach

Here’s my simple but delicious apple cake for Pesach. I hope you enjoy.

Batter

  • 1 cup potato starch
  • 1 ½ cup Cake Meal
  • 2 ½ cup sugar
  • 1 cup oil
  • 4 unbeaten eggs, room temp
  • ½ teaspoon salt
  • ⅓ cup orange juice
  • 2 ½ teaspoons vanilla
  • 3 teaspoons baking soda
  • Apple mixture

  • 6 thinly sliced apples
  • 2 teaspoons cinnamon
  • 3 Tablespoons sugar
  • 2 large bowels
  • 3 quart pyrex cake pan
  • Preheat oven to 350°F.
  • Mix all of step one ingredients in a bowl and beat until smooth.
  • In a separate bowl mix 6 thinly sliced apples with with two teaspoons cinnamon and 3 Tablespoons of sugar.
  • In pyrex dish alternate layers of batter and apple mixture. End with apples on top.
  • Bake at 350°F for over two hours or until done.
