Cheddar and Chive Biscuits

Golden, fluffy cheddar and chive biscuits on a beige plate atop a linen napkin, perfect for a savory side or snack.

Here is a great side to soups, chilis, or for breakfast just by themselves. Makes about 20 small biscuits.

  • 1 ¾ cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • ¼ tsp black pepper
  • 5 Tbsp unsalted butter, cut into small pieces
  • ½ cup aged Cheddar cheese, grated
  • 2 Tbsp chopped fresh chives
  • ¾ buttermilk
  • Baking sheets
  • Parchment paper or Silpat mat
  • Sifter
  • Large bowl
  • Spoon
  • Preheat oven to 400°F.
  • Sift flour, baking powder, baking soda, salt and pepper into large bowl.
  • Rub butter into dry ingredients until it resembles course bread crumbs.
  • Add cheese and chives and stir tko mix.
  • Make a well in the center of mixture.
  • Add buttermilk and stir vigorously until batter comes away from sides of bowl.
  • Drop batter in mounds (about 2 Tbsp) onto baking sheet spaced about 2-3 inches apart.
  • Bake for 12 –15 minutes, until golden brown.
  • For cheddar and bacon biscuits, substitute 3 Tbsp crumbled, cooked bacon in place of chives.
