Fig Newton Bars

Fig newtons are best homemade. This is best when figs are in season. This makes about 35-40 cookies.

Filling:

  • 1 Cup Figs
  • 1 ½ Cup Water
  • 1 Cup Apple Juice
  • ¼ Cup sugar
  • ⅛ tsp grated orange zest

Dough:

  • 4oz. (1 stick) butter, softened
  • ½ Cup Vanilla sugar
  • ½ tsp orange zest
  • 1 large egg white
  • ½ vanilla extract
  • 1 ½ Cups flour

  • Medium or large sauce pan
  • Mixer with paddle attachment
  • Spatula

Filling:

  • Combine all ingredients except orange zest in medium saucepan and bring to a boil. Reduce heat to a simmer and continue cooking 1-2 hours until figs are soft and spreadable.
  • Transfer to food processor with blade and add zest and process until smooth. Allow to cool.

Dough:

  • In mixer with paddle attachment, Cream butter, Vanilla sugar, and orange zest.
  • Scrape down sides and add egg white and Vanilla extract.
  • Add in flour and beat on low speed until dough comes together
  • Wrap in plastic and refrigerate for 2 hours.
  • Preheat oven to 350º. Line baking sheets with parchment or Silat.
  • On floured surface, roll dough out to approx. 12×16 rectangle.
  • Cut into 4 equal strips, each 12×4.
  • Spoon filling down center of each strip and fold dough over filling and pinch edges together.
  • Place on prepared cookie sheet, seam-side down.
  • Bake 12- 15 minutes, rotating sheets halfway through. until golden.
