Avocado Ice Cream

I always like to try something different. This was a very good and interesting surprise. I always love to see the reactions of people before and after they try this. This recipe makes about 1 pint.

  • 2 avocados (about 8 oz each)
  • ¼ tsp kosher salt
  • ½ cup superfine sugar
  • 3 Tbsp fresh lemon juice
  • ½ cup heavy cream
  • Ice cream machine
  • Food processor
  • Knife
  • Peel and pit avocados.
  • Cut into chunks and puree in food processor.
  • Add remaining ingredients and process until incorporated.
  • Process according to ice cream machine manufacturer’s settings.
