Papa a la Huancaina

Peruvian dish "Papa a la Huancaína" with potatoes, yellow sauce, boiled egg slices, and olives on a lettuce leaf.

This is a favorite for my son. He loves this plate. In my country we serve this with arroz con pollo. it is very easy to make.

For 4 or 6 people.

  • 4 medium potatoes
  • 2 yellow chilies (aji amarillo)
  • 1 cup cream
  • ½ lb fresco cheese, grated (like mozzarella but saltier)
  • 1 small onion, chopped
  • 2 eggs, hardboiled
  • 6 olives (1 for each person)
  • 1 leaf of lettuce per person
  • Salt, to taste
  • Sauce pan
  • Blender
  • Cook the potatoes in water until soft.
  • Cook the eggs in water until hardboiled.
  • Put chilies, cheese, cream in blender. Blend until it becomes creamy.
  • Add salt to taste.
  • If the cream is to liquidity add some crackers (not salty) to thicken.
  • Peel potatoes and eggs. Cut them into slices about ¼ inch thick.
  • Place some potato into a leaf of lettuce. Cover with some cream, then some egg and finally some olive. Repeat creating 1 for each person.
