Peppers & Onions

Onions and peppers are a simple side dish that is a prefect accompaniment for everything from fajitas to fish.

  • 1 medium yellow onion, chopped
  • 2 bell peppers, chopped (red, green and or yellow)
  • a few dashes of olive oil
  • 1-2 cloves garlic
  • salt and pepper to taste
  • frying pan or skillet, I prefer cast iron
  • Lightly coat the bottom of the frying pan with olive oil and sweat onions over a medium low heat for 10 minutes.
  • Add peppers and garlic and continue to sauté for at least another 5 minutes.
  • Transfer to serving dish once onions have turned translucent and sweet and the peppers nice and soft. Salt and pepper to taste.
  • The longer you sauté the more the flavors mesh and better this gets. Time is your friend.
