Pig around a Blanket

Golden brown pigs in a blanket, wrapped in crispy bacon, fresh out of the oven on a baking tray with egg wash nearby.

Most everybody has heard of “pigs in a blanket” but now the “pig” has got the upper hand! These rolls are great to eat on their own or with a warm winter meal.

Makes a dozen.

  • 4 cups flour
  • 1 envelope dry yeast
  • pinch of salt
  • 1 ⅔ cups hot water
  • 12 lean bacon strips
  • 1 egg, beaten
  • Bowl
  • Ramekin
  • Measuring cup
  • Baking sheet lined with parchment or Silpat mat
  • Cutting board
  • Pastry brush
  • Pour a little of the hot water into a ramekin.
  • Add yeast to dissolve (about 5 minutes).
  • Place flour, yeast mixture and salt into bowl and stir together.
  • Add a little water and mix.
  • Add remaining water and using your floured hands, mix and pull dough together.
  • The dough will be a little sticky.
  • Turn dough unto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
  • Divide dough into 12 even pieces and roll into elongated cylinder.
  • Place a slice of bacon on cutting board and run back of knife down its length to stretch it slightly.
  • Wrap around one of the “rolls”.
  • Repeat until all are wrapped.
  • Place on prepared baking sheet.
  • Set aside in warm place and let rest (about 30 minutes) until they have doubled in size.
  • Preheat oven to 400°F.
  • Brush with egg whites.
  • Bake for 20-25 minutes, or until they have cooked and browned.
