Quick chicken stock

A recipe calls for homemade stock, but you don’t have all day to boil the bones of a flightless fowl. What’s a cook to do? Make some in a hurry. Fortunately it’s easy and takes only an hour or two. Best of all you can snack on some boiled chicken when you are done.

  • 4 chicken thighs, I recommend air-chilled
  • 6-8 cups water
  • A few pinches of salt
  • Large pot
  • Pour the water into a pot, add the chicken and bring to a boil.
  • Reduce heat to medium. Cover and simmer at a low boil for at least one hour.
  • Add a few pinches of salt to bring out the flavor.
