Swedish Meatballs

My name is Kirsten Anderson and I’m Emma Harris’ mom. This is one of our family’s favorite dinners. This recipe was given to me by my grandmother.

  • 1 lb. ground beef
  • ½ cup bread crumbs
  • medium onion
  • dash of salt
  • ½ cup milk
  • 1 egg
  • scant teaspoon nutmeg
  • 1 can consomme soup
  • blender
  • mixing bowl
  • frying pan
  • roasting pan
  • Chop onion.
  • In blender, combine onion, salt, milk, egg and nutmeg until smooth.
  • In mixing bowl, combine blended mixture, ground beef, and bread crumbs.
  • Roll into meatballs and brown meat in frying pan.
  • Drain meat.
  • Put meat into roasting pan and add 1 can of consomme.
  • Cover and cook at 275°F for about 1 hour.
  • Add water if necessary to keep the meatballs juicy.
