Turkey burger

This recipe is from our friend and Vida’s caretaker Leila. It is a total hit with our kids Vida (4), her sister (16 months) and with Faz and I. It can be served with vegies, salad, rice or pasta for lunch or dinner. It is great as a lunch snack to go.

  • 1 pound ground turkey
  • 1 pound potatoes
  • 1 large onion
  • 2 eggs
  • Salt
  • Pepper
  • Tumeric (not necessary, but great healthy spice)
  • Canola oil
  • Blender or grate
  • Pan
  • First cook the potatoes in boiling water for 10 minutes.
  • Grate potatoes together with the onion either by hand or with a blender.
  • Mix the turkey with the potato-onion mixture. Add 2 beaten eggs and add salt and pepper to taste.
  • Heat oil in pan until hot.
  • Scoop the mixture with a spoon and place in hot oil.
  • Flatten until burger size. Lower heat to medium until the burgers are golden brown, then turn over until golden brown.
