Windows on the World Broiled Shrimp with Feta Cheese

Baked shrimp with tomato slices, olives, and crumbled cheese in a white dish, served with a side of rice.

One of the many losses to New York City and the world on 9-11 was a great restaurant called Windows of the World on the 107th floor of number one World Trade Center. At lunch time it was a club not open to the public for business and primarily financial execs like myself. One of my favorite dishes (opinion shared by many) was a broiled shrimp dish with black olives and feta cheese (faux Greek) which could be ordered as a starter or a main course. With the loss of the restaurant I experimented to recreate this easy to make dish. Other spices and herbs could be added but its just fine as described below.

  • 1 Lb large pealed shrimp
  • 2 Tbsp olive oil
  • ½ cup chopped yellow onion
  • ⅔ cup crumbled feta cheese
  • ½ cup small black greek olives, pitted and cut in half
  • 1 Roma tomato
  • ½ lime
  • Salt and pepper to taste
  • Use a shallow baking dish large enough to place shrimp in one layer
  • Frying pan
  • Brush one Tablespoon olive oil on shallow baking dish
  • Place shrimp in dish.
  • In a frying pan, saute onion until translucent. Sprinkle over shrimp when ready.
  • Add Greek olives.
  • Sprinkle Feta cheese over the shrimp, onions and olives.
  • Slice Roma tomato as thin as possible and lay slices over the feta cheese.
  • Add salt, fresh ground pepper and remaining olive oil.
  • Sprinkle lime juice over everything.
  • Place in 350°F preheated oven for about three (3) minutes to heat the bottom of baking dish.
  • Switch off oven and turn on broiler. Cook for 2-3 minutes longer.
  • Serve with rice and a good white wine.
