Tired of flat cookies?

People ask me all the time why their cookies run flat when they bake them. The answer is easy. They are skipping a critical step which is to let the dough cool in refrigerator for at least 30 minutes prior to cooking. The colder dough allows for the cookie to hold their shape in the oven.

Another tip: Take cookies out of the oven a minute or two before totally done. Food continues to cook after removing – something we often forget.
