The best Flour

A friend who loves to bake mentioned King Henry’s as the brand of flour that chef’s love. This brings up two questions. The first is why? And the second is where can I find some?
I am going to take another stab at Charlotte’s Pate a Choux and I thought I would aim for the best ingredients.

Your friend probably meant King Arthur Flour. It’s the brand I use. I use it because it is a natural product and something that’s not been artificially bleached or enhanced. I find it in my local market (of course they carry the flour because I bugged them) but, you can order on line at: King Aurthur Flour. They also carry a nice range of hard-to-find flours.
