Fajitas

My three boys have just discovered that they love fajitas. We recently bought a panini machine, which makes it really quick and easy to make the fajitas. Great Sunday night family dinner. But - I haven’t found any great recipes for shrimp fajita, which is their favorite. Any suggestions?
