What can you do with a Meyer lemon?

I just made Velvety Meyer lemon ice cream and it was delicious. It comes out creamy, velvety, sweet and sour. Not only is this recipe easy to make but also it does not require eggs which means it cooks faster and is good for people who need to avoid eggs (or in the case of my husband cut back.)
