Turkey stuffing

There are loads of recipes for stuffing and most, I reckon, are not great. My partner, Angela, makes a wonderful sticky rice stuffing with Chinese ham and shitake mushrooms. It works really well with turkey. I was wondering if anyone has any great tips for making a stuffing that will surprise my guests.
