Smoked salmon egg special

OK, so it’s a lousy title, but don’t be put off. This is special. It is the kind of thing you are unlikely to make for yourself but definitely something for a loved one whom you want to impress. Why not save it to celebrate a special occasion… it works a treat on birthday mornings.
Ready
- Fresh eggs
- Seasoning
- Butter
- Good quality smoked salmon
Set
- Whatever you need to make your scrambled eggs
- One ramekin per person
Go
- Thinnly spread a little soft butter around the ramekin.
- Take long strips of your smoked salmon and line the ramekin leaving excess salmon draping over the sides. (If I could, I would draw a diagram showing how I do this, starting with a criss-cross and then going diagonally. I am sure you will find your own way of doing this without any ramekin showing through.)
- Scramble your eggs to your specification. I like mine slowly scrambled in a saucepan with a little cream, salt and pepper. Make sure the finished eggs are light and fluffy and not dry.
- Fill the ramkein with the scrambled eggs and fold over the salmon to cover the ramekin.
- Now the anxious bit. Place a serving plate upside down over the ramekin, hold both tightly, flip and turn out the salmon and eggs.
- You should now have a perfectly formed smoked salmon parcel with succulent eggs inside.
What you should know
You will want to dress up the plate a little. I like mine with a few salad leaves alongside with the lightest of dressings.
