Chipotle Aioli
I make this to go with the great Cuban sandwiche recipe. On reflection, this chipotle aioli adds zest to just about everything so is worthy of its own page!
Try it with steaks, eggs, sturdy fish… gosh, just about anything actually.
Ready
- 1 7oz can of chipotle peppers in adobo sauce
- 1 egg
- ½ lime
- 1 Tbs minced garlic
- Around 2 Tbs cilantro (chopped)
- 2 cups vegetable or canola oil
- Salt and pepper to taste
Set
- Food processor
Go
- Zest lime into food processor.
- Cut lime in half and remove the rind.
- Blend the half of lime with the garlic and the chipotle peppers in the food processor until the mixture is smooth.
- Add the egg.
- With the food processor running, slowly add the vegetable oil.
- Finally, add the cilantro and season to taste.
A great recipe. Who knew that mayonnaise could be this easy. Or this tasty. I use it on all of our lunchtime sandwiches to to make them really pop with flavor.

The sauce alone is sooo delicious—perfectly spicy with the chipotle blending with the garlic and lime so well! Used it this week on sandwiches, eggs, potatoes, bagels, fish and tofu and it made everything much, much better

I adore this spicy mayonnaise. I’d use it on breakfast cereal if I could keep it from getting soggy. Great stuff. Delicious with beef, pork, eggs, chicken and more.

Oh, man is this good. We have been eating it night and day. I can confirm that this chiptole mayo tastes great on everything but breakfast cereal.

I was out of chipotle peppers in adobo sauce so I substituted some pickled jalapeños - the result was excellent. I encourage you to improvise with this recipe.
