I think these are my absolute favourite sausages. That is a difficult thing to say as I have had many great sausages of very different styles. They are obviously a quality product, made with only fresh natural ingredients. They are meaty, but not too gamey (as many gourmet sausages are in my opinion) and the overall taste is well rounded. Most importantly, you can see the love and care that Debbie and Andrew put into their business and that, for me, is what it is all about.

I had the Sicilians this evening and they were sensational. However, I’m not sure I entirely did them justice in my cooking. I didn’t quite crisp them up enough (for want of keeping them moist). Perhaps I can get Debbie to post a piece on how they should be done.

Absolutely delighted that you found our Sicilian sausages delicious to your palette, containing garlic, sundried tomatoes, Mozzarella cheese and succulent shoulder pork it is one of our most flavoursome sausages.

All our sausages can be cooked by frying, grilling or in the oven: fry slowly in a little olive oil for 12 – 15 minutes, constantly tossing around in the pan, grill on a medium heat for 20 minutes, turning occasionally, in the oven 190˚C/375˚F Gas mark 5 in a tray brushed with a little olive oil for 35 – 40 minutes. Like all premium pork sausages you do not prick the skins otherwise all the beautiful juices and flavours pour out.

I think my favourite meal with the Sicilian sausages is roasting them in the oven with, chunky cut peppers, courgettes and slices of aubergine served with herb flavoured cous cous.

We have 5 other readily available sausage varieties besides the Sicilian, they are, Breakfast, Great Yorkshire, Colman’s, Newcastle Brown Ale and the Harrogate which is gluten and wheat free. Hi Debbie, thanks for your suggestions. I’ve found a way of getting them absolutely perfect: cook them slowly in a covered frying pan with a splash of water for 30 minutes, then remove the cover and cook for another 5 minutes or so, turning constantly. They come out wonderfully moist and the finishing just browns them off and crisps them up slightly.

I’ve also found that cutting the sausage in to pieces on my plate before eating allows the meat to relax slightly, improving the texture.
