Gooey Chocolate Puddings

This dessert can be prepared in advance and just left in the fridge until ready to cook. It is easy to make (I do it with my children) and absolutely delicious. It is best served with a small hole and vanilla ice cream or cream poured in! Not to be eaten if on a diet!
Ready
- 125g dark chocolate, chopped
- 125g unsalted butter
- 3 large eggs
- 150g sugar
- 35g plain flour
- butter and flour for ramekins
Set
- pyrex bowl
- small saucepan
- whisk
- large mixing bowl
- 4 x ramekin dishes
Go
- Put the chopped chocolate and butter in a bowl and suspend over a pan of simmering water. Whisk every now and again until melted.
- In another bowl, whisk together the eggs, sugar and flour. Gradually whisk in the melted chocolate and butter. Set aside to rest.
- Butter ramekins and shake the flour around. Get rid of any excess flour.
- Preheat oven to 400°F for 20 minutes. Pour the mixture into the ramekins and put in oven for 10 - 15 minutes, until the tops are firm and cracking slightly and the edges set.
