South African carrot cake

This really is a lovely cake to eat you can even enjoy it with custard as a pudding.
Ready
wet ingredients
- 8ml margarine or butter
- ½ cup sugar
- 2 eggs beat till light and fluffy
dry ingredients
- 1 ½ cup flour
- 2t ginger
- ¼t salt
- 1 ¼ t bicarb of soda
- ½ t
carrot mix
- 2tablesp apricot jam
- 1 cup very fine grated carrots
- 2 tablesp chopped nuts
- 1 cup raisens
- 1 cup buttermilk or yogurt(any flavour)
Set
- large bowl
- spatula
- greased ovendish
Go
- Beat eggs till light and fluffy and mix with other wet ingredients.
- Add dry ingredients (flour, ginger, salt, bicarb of soda, nutmeg) mix well into the egg mix.
- Add to this the carrot mix and mix well.
- Bake in greased ovendish for 30 to 40 min at 350°F cool and turn out.
- You can ice this cake or eat it thinly sliced with marg and jam.
