Swedish Meatballs

My name is Kirsten Anderson and I’m Emma Harris’ mom. This is one of our family’s favorite dinners. This recipe was given to me by my grandmother.
Ready
- 1 lb. ground beef
- ½ cup bread crumbs
- medium onion
- dash of salt
- ½ cup milk
- 1 egg
- scant teaspoon nutmeg
- 1 can consomme soup
Set
- blender
- mixing bowl
- frying pan
- roasting pan
Go
- Chop onion.
- In blender, combine onion, salt, milk, egg and nutmeg until smooth.
- In mixing bowl, combine blended mixture, ground beef, and bread crumbs.
- Roll into meatballs and brown meat in frying pan.
- Drain meat.
- Put meat into roasting pan and add 1 can of consomme.
- Cover and cook at 275°F for about 1 hour.
- Add water if necessary to keep the meatballs juicy.
Kirsten, your recipe is a life saver! Robert loves Swedish meatballs and the only ones I could offer were the Swedish meatballs we had in Ikea’s restaurant in Moscow and Swedish meatballs we can get in ready meals. I was looking for a recipe to be able to make it myself and here you have what I’ve been looking for for a while now! I can’t wait to try it. Thank you!
