Steak au poivre

OK, there is no definitive steak au poivre recipe… but does anyone have a really good one?
I tend to avoid them because I think they over-power the meat, but too many people whose taste I respect tell me it is a great dish.

Hey thanks, John. As always… you come with the goods. As it happens, I had a bash at it with Peter. It turned out pretty well. We used excellent peppers (not too feisty, yet full of flavour) and the meat was great too.
