Cheddar and Chive Biscuits

Here is a great side to soups, chilis, or for breakfast just by themselves. Makes about 20 small biscuits.
Ready
- 1 ¾ cups flour
- 2 tsp baking powder
- ½ tsp baking soda
- pinch of salt
- ¼ tsp black pepper
- 5 Tbsp unsalted butter, cut into small pieces
- ½ cup aged Cheddar cheese, grated
- 2 Tbsp chopped fresh chives
- ¾ buttermilk
Set
- Baking sheets
- Parchment paper or Silpat mat
- Sifter
- Large bowl
- Spoon
Go
- Preheat oven to 400°F.
- Sift flour, baking powder, baking soda, salt and pepper into large bowl.
- Rub butter into dry ingredients until it resembles course bread crumbs.
- Add cheese and chives and stir tko mix.
- Make a well in the center of mixture.
- Add buttermilk and stir vigorously until batter comes away from sides of bowl.
- Drop batter in mounds (about 2 Tbsp) onto baking sheet spaced about 2-3 inches apart.
- Bake for 12 –15 minutes, until golden brown.
What you should know
For cheddar and bacon biscuits, substitute 3 Tbsp crumbled, cooked bacon in place of chives.
