Peppers & Onions

Onions and peppers are a simple side dish that is a prefect accompaniment for everything from fajitas to fish.


  • 1 medium yellow onion, chopped
  • 2 bell peppers, chopped (red, green and or yellow)
  • a few dashes of olive oil
  • 1-2 cloves garlic
  • salt and pepper to taste


  • frying pan or skillet, I prefer cast iron


  1. Lightly coat the bottom of the frying pan with olive oil and sweat onions over a medium low heat for 10 minutes.
  2. Add peppers and garlic and continue to sauté for at least another 5 minutes.
  3. Transfer to serving dish once onions have turned translucent and sweet and the peppers nice and soft. Salt and pepper to taste.

What you should know

The longer you sauté the more the flavors mesh and better this gets. Time is your friend.
