What you should know
I once accidentaly used regular oats instead of the quick kind…they never dried. I ate them anyway but don’t tell anyone. If I am feeling like just more of a chocolate taste, I’ll only put a tablespoon of peanut butter. …and…when I am in love…I shape these into hearts with two teaspoons…and of course…give them to the oh so lucky guy…that’s what chocolate is for anyway in my book.

As promised, Nathalie, I tried your cookies in ice cream sandwich idea. It’s a keeper! I made your cookies and flattened them, roughly into circles, between wax paper. I then made some homemade French vanilla ice cream. I had to get creative as far as molds, so I used ramekins. I packed the ice cream into the ramekins, wrapped in plastic, and put in freezer to set. To unmold them, I simmered water and with tongs, dipped the ramekins in the warm water for a few seconds. I then removed the ramekins and inverted on cookie. Topped with another cookie and enjoyed. You should try it!
aw, man, I havent had any of these since 1969 when my mom made them one day really quick to shut us kids up. I thought I had imagined them because I couldn’t locate a recipe anywhere. I now have a two year old who loves oatmeal and chocolate. this is gonna be a party!!! thanx
sound delish….i’m definitely going to try these. maybe add some dried cranberries.
These look great! With these there’s no excuse not to put something special in someone’s packed lunch. I am going to flatten them out a little between wax paper and try using them for ice cream sandwiches. I let you know the results.
