Aunt Dolly's Black Bottoms

My Aunt Dolly makes these little tiny cupcakes for every family gathering, and they’re always the first thing to disappear.
Ready
cream cheese mixture
- 8 oz cream cheese
- 1 egg
- ⅓ cup sugar
- ⅛ tsp salt
- 6 oz mini choc chips
chocolate batter
- 1 ½ cups flour
- 1 cup sugar
- ¼ cup cocoa
- 1 tsp salt
- 1 tsp baking soda
- 1 cup water
- ⅓ cup oil
- 1 tblsp vinegar
- 1 tsp vanilla
Set
- electric mixer
- sifter
- mini cupcake pans
- 36 mini cupcake liners
Go
- Preheat oven to 350°F
- Beat cream cheese, egg, ⅓ cup sugar, and ⅛ tsp salt until well beaten. Stir in chocolate chips and set aside.
- Sift flour, 1 cup sugar, cocoa, salt and baking soda. Add water, oil, vinegar and vanilla. Beat until well blended.
- Fill cupcake cups ⅔ full with chocolate batter and top with 1 tablespoon cream cheese mixture.
- Bake for 30-35 minutes.
Oh, yumm! I used to eat these by the dozen when I was a child! I’m not waiting for a family gathering to try this recipe out!
