Papa a la Huancaina

This is a favorite for my son. He loves this plate. In my country we serve this with arroz con pollo. it is very easy to make.
For 4 or 6 people.
Ready
- 4 medium potatoes
- 2 yellow chilies (aji amarillo)
- 1 cup cream
- ½ lb fresco cheese, grated (like mozzarella but saltier)
- 1 small onion, chopped
- 2 eggs, hardboiled
- 6 olives (1 for each person)
- 1 leaf of lettuce per person
- Salt, to taste
Set
- Sauce pan
- Blender
Go
- Cook the potatoes in water until soft.
- Cook the eggs in water until hardboiled.
- Put chilies, cheese, cream in blender. Blend until it becomes creamy.
- Add salt to taste.
- If the cream is to liquidity add some crackers (not salty) to thicken.
- Peel potatoes and eggs. Cut them into slices about ¼ inch thick.
- Place some potato into a leaf of lettuce. Cover with some cream, then some egg and finally some olive. Repeat creating 1 for each person.
