Papa a la Huancaina

This is a favorite for my son. He loves this plate. In my country we serve this with arroz con pollo. it is very easy to make.

For 4 or 6 people.

Ready

  • 4 medium potatoes
  • 2 yellow chilies (aji amarillo)
  • 1 cup cream
  • ½ lb fresco cheese, grated (like mozzarella but saltier)
  • 1 small onion, chopped
  • 2 eggs, hardboiled
  • 6 olives (1 for each person)
  • 1 leaf of lettuce per person
  • Salt, to taste

Set

  • Sauce pan
  • Blender

Go

  1. Cook the potatoes in water until soft.
  2. Cook the eggs in water until hardboiled.
  3. Put chilies, cheese, cream in blender. Blend until it becomes creamy.
  4. Add salt to taste.
  5. If the cream is to liquidity add some crackers (not salty) to thicken.
  6. Peel potatoes and eggs. Cut them into slices about ¼ inch thick.
  7. Place some potato into a leaf of lettuce. Cover with some cream, then some egg and finally some olive. Repeat creating 1 for each person.
