Most everybody has heard of “pigs in a blanket” but now the “pig” has got the upper hand! These rolls are great to eat on their own or with a warm winter meal. Makes a dozen.

- 4 cups flour
- 1 envelope dry yeast
- pinch of salt
- 1 ⅔ cups hot water
- 12 lean bacon strips
- 1 egg, beaten
Set
- Bowl
- Ramekin
- Measuring cup
- Baking sheet lined with parchment or Silpat mat
- Cutting board
- Pastry brush
Go
- Pour a little of the hot water into a ramekin and add yeast to dissolve (about 5 minutes).
- Place flour, yeast mixture and salt into bowl and stir together.
- Add a little water and mix.
- Add remaining water and using your floured hands, mix and pull dough together. The dough will be a little sticky.
- Turn dough unto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
- Divide dough into 12 even pieces and roll into elongated cylinder.
- Place a slice of bacon on cutting board and run back of knife down its length to stretch it slightly. Wrap around one of the “rolls”. Repeat until all are wrapped.
- Place on prepared baking sheet. Set aside in warm place and let rest (about 30 minutes) until they have doubled in size.
- Preheat oven to 400°F.
- Brush with egg whites.
- Bake for 20-25 minutes, or until they have cooked and browned.
