Popcorn chicken nuggets

We pretend it’s for the kids…but, Joel and I love this one!
Ready
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 lime
- ½ cup milk
- ½ cup flour
- 2 eggs
- 1 cup bread crumbs
- 1 lb. boneless, skinless chicken breast
- ½ cup canola oil
Set
- Frying pan
- Bowls
Go
- Cut 1 lb boneless, skinless chicken into tiny pieces.
- marinate in ½ lime juice, ½ tsp paprika, ½ tsp garlic powder, ¼ tsp onion powder.
- Take 4 bowls, in each bowl:
- Put ½ cup of milk in a bowl.
- Put ½ cup flour in a bowl.
- Put 2 beaten eggs in a bowl.
- Put 1 cup bread crumbs in a bowl.
- Add, ½ tsp paprika, ½ tsp garlic powder, ¼ onion powder to the bread crumbs for additional flavor.
- Start with the first bowl, take a piece of chicken and dip into the milk, then flour, then egg, and last bread crumbs. Continue with each piece of chicken until all are coated.
- Put ¼ c of canola oil in a frying pan and heat.
- Add the coated chicken pieces and fry until golden on each side.
- Place on a paper towel to cool.
What you should know
Very yummy served with baked yam fries or mashed potatoes!

Well it helps when you know someone who operates a manual grinder….
I usually dry out the chilli i like (solar power or toaster oven), plus a bit of garlic or whatever other spices I might want to add to the kick, go see my fav indian grinder person and have it done!
Alternatively, you can put it through a coffee grinder, set on super fine guage. Thing is, with a coffee grinder, all the oils from the bean would get into the chili powder, and not all grinders have that super fine powder setting.
Food is great. Cooking is way better.

Great snack for a stay in movie nights. I substituted paprika with home made chili powder to set my tongue on fire, and had it with lambic beer! It was YUMS!
