Scrambled eggs with smoked salmon

My daughters LOVE eggs. And they both can eat ridiculous amounts of salmon. Thus, this recipe is the perfect meal for them. The sweetness of the tomatoes are a good balance to the salty salmon, and the cream cheese adds good yummy texture to the dish. This is great breakfast fare.
Ready
- 4 eggs
- Smoked salmon
- 1 small tomato
- A generous dollop of Cream Cheese (room temp)
- Teaspoon of butter
- Salt and Pepper
Set
- Bowl
- Whisk
- Frying pan
- Spatula
Go
- Dice your small tomato.
- Cut smoked salmon in bite size pieces.
- Set aside.
- Whisk your eggs in a bowl for a minute.
- Get your frying pan hot.
- Melt butter.
- Begin frying your egg mixture.
- Mix in your diced tomatoes.
- Gently scramble your eggs.
- Then add dollop of cream cheese.
- Add smoked salmon pieces and continue to scramble.
- Sprinkle salt and pepper to taste.
- Serve eggs piping hot!
What you should know
Serves just enough breakfast for two growing children. Goes well with buttered toast.
