Tired of flat cookies?

Mothers ask me all the time why their cookies run flat when they bake them. The answer is easy. They are skipping a critical step which is to toss the dough into the refrigerator for a ½ hour prior to cooking. The colder dough allows for the cookie to hold their shape in the oven.

  • Another tip: Take them out of the oven a minute or two before totally done. Food continues to cook after removing - something we often forget.
