Sablés

These French cookies/crackers are crisp and a little bit sweet. This is a great accompaniment for cheeses. Makes about 2 dozen.
Ready
- ⅓ cup butter
- 1 ¼ cups flour
- ¾ cup blanched hazelnuts, lightly toasted and ground
- 2 Tbsp sugar
- 2 egg yolks, beaten with 2-3 Tbsp water.
Set
- Food processor
- Spatula
- Plastic wrap
- Baking sheet with lined with parchment or Silpat
- Wire cooling racks
Go
- Place butter, flour, hazelnuts, sugar, and beaten egg yolks in food processor and process to a smooth dough.
- Scape out dough and shape into log about 1 ½ inches thick.
- Wrap and chill.
- Preheat oven to 400°F.
- Remove dough from wrap and slice into ¼ slices and arrange on prepared baking sheet.
- Bake 7-10 minutes, or until golden brown.
- Transfer to racks to cool.
What you should know
I like these with goat cheese topped with fruit.
