Chick-Pea Nibbles

These are great for parties or a great snack. This recipe will make about 6 cups.
Ready
- 3 (15oz) cans chick-peas
- ½ cup flour
- 2 eggs
- 1 ½ Tbsp water
- 1 ½ cups fine bread crumbs
- Vegetable oil for frying
Set
- Deep fat fryer or high side saucepan
- 3 small bowls
- Strainer
- Cookie sheet
- Slotted spoons
- Plate with paper towels
Go
- Drain and rinse chick-peas. Blot dry on paper towels.
- Set-up for flouring: place flour in small bowl. In another bowl, beat eggs and water. In third bowl, place bread crumbs.
- Working in small handful batches, roll chick-peas in the flour, place them in strainer and shake off excess flour.
- Drop them into egg and stir to coat. Remove with slotted spoon and drain briefly.
- The last step, roll them in bread crumbs to cover lightly. Place on baking sheet and let stand for about 8 minutes.
- Continue until all the chick-peas are coated.
- Heat oil to 375°F.
- Quickly drop small batches into oil and cook until they are a golden brown. Remove with slotted spoon and drain on paper towels. Repeat until all chick-peas are fried.
What you should know
For a spicer mix, add curry or other seasonings to flour.
