Bluecoast Shrimp

My favorite shrimp recipe. It is easy and distinctive. Enjoy.
Serves: 4 adults
Cook Time: 5 minutes
Ready
- 1lb jumbo shrimp peeled and deveined
- 6 cherry tomatoes halved
- 2 cloves garlic
- handful of spinach
- 1 juiced lemon
- ½ tbs capers
- 1 tbs butter
- 1 shot of olive oil
- salt
Set
- Large skillet or dutch oven.
- Wood spoon to stir
Go
- Sear the shrimp in olive oil, garlic and tomatoes for 2 minutes.
- Add rest of ingredients but save the butter for last.
- When the spinach is wilted add the butter and twirl until creamy (don’t overcook butter).
- Enjoy!
What you should know
You can serve this as a stand along main course or even as an appetizer. I like it over saffron rice as well.

Blue moon rocket salad (not just for the name)

Saffron risotto (takes the rice addition to the next level)
Arabic Eggplant Salad (the sour smokey flavor offers a perfect compliment)
Israeli Couscous
Home Made French Fries (what don’t french fries compliment?)
