Steamed Rapini

Rapini is one of those great vegetables that is both familiar and exotic. It resembles a young, tender broccoli and has a freshness that is hard to resist. Popular in both Italian and Chinese cooking, rapini makes a wonderful compliment to any meal.

Ready

  • 1 bunch rapini
  • Squeeze of a lemon
  • Salt, to taste
  • Butter, optional but hardly necessary

Set

Go

  1. Steam rapini for about two minutes or to your taste.
  2. Remove to serving dish.
  3. Salt and lemon to taste.

What you should know

Be careful not to overcook. Rapini can be eaten raw, but is best with just a touch of steam giving it an al dente quality.

Andrew, this is my all-time favourite vegetable and works well on the side of any meat or fish. I love it steamed, but occasionally I throw a batch into a skillet with a touch of olive oil. Tossed around for a minute or two, it’s quite delicious.

This is another great — and simple — way to cook rapini. And since it is a seasonal I tend to make it a lot when I can get my hands on it. Variation is key.

I love rapini! Try sprinkling with some good olive oil before serving. Yumm.
